I have 500 vars. each have a particular name and label. so, I can order a put the variable that I would not like to destring in the first place. Webdestring var1, replace destring var2, replace --> This one does not end up replacing any values at all with the following message: "var1: contains nonnumeric characters; no replace" Of note, all of these characters are numbers as far as I can tell.
